Passionate, Guillaume Maurice main concerns in his kitchens are his team and his back to basics approach. Because in order for the customer to be satisfied, the team must be enjoying itself. Therefore, he considers learning to be a priority and devotes a large part of his time to conveying his knowledge and increasing the team's skills.
Far from an extravagant cuisine, his emphasis is on respect for the ingredients, because for Guillaume Maurice each ingredient should be used wisely to enhance all the dishes.
